Hot food holding not below 60ºC

 

Cold food holding not above 4ºC

 

Keep frozen food below    -18ºC

Safety

Cold is on the way and it is going to get to you! Be prepared with plenty to warm fluids and stay in the indoors as much as possible. If you can’t do that, take frequent rest breaks. Wear loose fitting clothing but not so loose as it will get entangled in moving parts or machines!
